Since its grand opening about a year ago, downtown Mountain View’s restaurant, Asian Box, has hardly seen a slow day. Asian Box, which “bridges the gap between fast casual and your favorite neighborhood joint,” is a modestly priced Asian fusion restaurant that’s remained popular since its opening. It serves up boxes of noodles and rice with whatever assortment of veggies, meat, tofu and sauces you could dream up. These tasty, quickly-prepared boxes end up being a bit pricey–the average price is $10, which adds up quickly, especially if you end up at Asian Box as much as I do.
Instead of making the trek downtown (that parking situation!) and having to spend money on lunch, making a box at home can be quick, simple and cheap.
Here’s what you need:
Chicken (frozen, microwavable strips work great)
Any vegetables you want (I like bell peppers, shredded carrots, bok choi and bean sprouts)
Cilantro and parsley
Sriracha sauce (for some spice)
Hard boiled egg (if you want some extra protein)
Here’s what you do:
Put water on the stove to boil. While it’s boiling, chop up your vegetables and slice the hard boiled egg in half.
Once the water boils, put the rice noodles in. Follow the directions on the packaging that denote how long to cook them for.
As the noodles are cooking, put all of your veggies into a wok (or a normal frying pan if you don’t have a wok) on medium heat with about a half cup of water. Stir the veggies until they are warmed or slightly browned.
Cook the chicken. With pre cooked, you can just put it in the microwave until it is warm. If the chicken has not been previously cooked, make sure to cook it based on the package directions.
Place the noodles, chicken and veggies in a bowl and toss them all together with the sauce of your choice. Try mixing 2 tablespoons teriyaki sauce with 1 teaspoon of sriracha for a mild sauce with a bit of a kick to it.
Pour the mix of noodles, chicken and veggies onto a plate. Sprinkle chopped herbs on the top, place the hard boiled egg on the side, and enjoy!
